Dice the chicken breast, red bell pepper, and red onion into small, uniform pieces.
On a parchment-lined baking sheet, toss the chicken, peppers, and onions with half of the olive oil, sea salt, black pepper, and garlic powder.
Roast the mixture in the oven for 12-15 minutes until the chicken is cooked through and the vegetables are tender with slightly charred edges.
In a medium bowl, whisk together the whole eggs and liquid egg whites until the mixture is uniform and frothy.
Heat the remaining olive oil in a non-stick skillet over medium-low heat.
Pour the egg mixture into the skillet and let it sit for 30 seconds before gently stirring with a spatula to create soft curds.
When the eggs are nearly set, fold in the roasted chicken and vegetable mixture along with the fresh baby spinach.
Continue to cook for 1 minute until the spinach is just wilted and the eggs are fully cooked but still moist.
Transfer to a plate and serve immediately.
