Dip the chicken into the egg wash, then press firmly into the almond flour mixture until both sides are thoroughly coated.
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Sear the chicken for 2-3 minutes per side until the crust is golden and fragrant.
Spoon the marinara sauce over the chicken and top with the mozzarella cheese.
Transfer the skillet to the oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is bubbly.
While the chicken bakes, lightly sauté the zucchini (spiraled into noodles) in a separate pan for 2 minutes.
Serve the crispy chicken parmesan over the bed of zucchini noodles.
