Pan-Seared Rockfish with Roasted Potatoes and Green Beans
Pan-seared rockfish fillets served with crispy roasted potatoes and tender blue lake green beans, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Rockfish fillet
1 medium Yukon Gold potato
1 cup Blue Lake green beans
1 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Dice the potato into half-inch cubes and toss them in a bowl with half of the olive oil, garlic powder, and a pinch of salt and pepper.
Spread the potatoes onto the baking sheet and roast for 20 minutes.
While potatoes roast, trim the ends of the green beans and toss them with the remaining olive oil.
Add the green beans to the baking sheet with the potatoes and roast for an additional 10 to 12 minutes until the vegetables are tender.
Pat the rockfish fillet dry with a paper towel and season both sides with the remaining salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the rockfish for 3 to 4 minutes per side until golden and opaque.
Plate the fish alongside the roasted vegetables and serve with a fresh lemon wedge for a bright finish.
