Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with garlic green beans and brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 tsp Olive Oil
1 clove Garlic
1 wedge Lemon
PREPARATION
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Flip the salmon and cook for another 2-3 minutes until opaque throughout, then remove from heat.
In the same skillet, add the trimmed green beans and minced garlic with a splash of water, covering to steam-sauté until tender-crisp.
Serve the seared salmon over a bed of warm brown rice with the garlic green beans and a fresh lemon wedge.
