In a small saucepan, bring 1 cup of water and 0.25 tsp sea salt to a boil.
Whisk in the stone-ground grits, reduce heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed.
Once grits are cooked, remove from heat and stir in the non-fat plain Greek yogurt until the texture is velvety.
While grits simmer, heat 1 tsp of ghee in a large skillet over medium-high heat.
Add the diced green bell pepper, yellow onion, and celery to the skillet, sautéing for 5 minutes until softened.
Stir in the minced garlic and sauté for 1 minute until fragrant.
Add the wild-caught shrimp to the skillet and sprinkle with Cajun seasoning and black pepper.
Sauté the shrimp for 3-4 minutes, turning once, until they are pink and opaque throughout.
Spoon the creamy grits into a bowl and top with the sautéed Cajun shrimp and vegetable mixture.
Garnish with chopped fresh parsley and serve immediately.
