7 oz Salmon fillet
1 tbsp Dijon mustard
1 tbsp Almond flour
1 tsp Dried parsley
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Broccoli florets
1 cup Red bell pepper strips

PREPARATION

In a small bowl, whisk together the Dijon mustard, almond flour, dried parsley, garlic powder, and half of the sea salt and black pepper.
Place the salmon fillet on one side of the baking sheet and spread the herb mixture evenly over the top, pressing gently to adhere.
On the other side of the sheet, toss the broccoli florets and bell pepper strips with extra virgin olive oil and the remaining sea salt and black pepper.
Roast for 12-15 minutes until the salmon is flaky and the vegetables are tender and slightly charred.
Squeeze fresh lemon juice over the salmon and vegetables before serving.
