Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky sautéed green beans and a smooth sweet potato mash, finished with a bright squeeze of lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon
100g Sweet Potato
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water for 10-12 minutes until soft.
Drain the sweet potato and mash thoroughly with a pinch of sea salt until creamy.
Pat the salmon dry and season with salt and pepper.
Heat half the olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan and sear for 4-5 minutes per side until the edges are golden and crisp.
Remove salmon and add the remaining oil, minced garlic, and green beans to the skillet.
Sauté the beans for 5 minutes until tender-crisp and fragrant.
Serve the salmon over the sweet potato mash with a side of garlic green beans and a fresh lemon wedge.
