1.5 cups Asparagus spears
0.5 tbsp Extra virgin olive oil
0.5 medium Lemon
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the asparagus spears on a baking sheet with 0.25 tbsp of olive oil, minced garlic, and half of the salt and pepper.
Roast the asparagus for 12-15 minutes until tender and slightly charred at the tips.
Pat the salmon fillet completely dry with a paper towel and season both sides with the remaining salt and pepper.
Heat the remaining 0.25 tbsp of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Flip the fillet and cook for an additional 2-3 minutes until the salmon is just opaque and flakes easily.
Serve the salmon immediately alongside the roasted asparagus with a fresh squeeze of lemon juice over the top.
