INGREDIENTS
5 ounces Salmon Fillet
150 grams Sweet Potato
2 cups Fresh Spinach
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of salted water until tender, about 12 to 15 minutes.
Drain the potatoes and mash until smooth, seasoning with a pinch of sea salt and black pepper to taste.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is golden and crispy.
Remove the salmon from the pan and set aside to rest.
Add the remaining teaspoon of olive oil to the same skillet and sauté the minced garlic for 30 seconds until fragrant.
