Heat avocado oil in a large cast-iron skillet over medium-high heat.
Add the diced sweet potatoes to the skillet and cook for 6-8 minutes, stirring occasionally, until they are fork-tender and lightly browned.
Push the potatoes to the edge of the pan and add the ground turkey to the center, breaking it apart with a wooden spoon.
Once the turkey is mostly browned, stir in the diced onions and red bell peppers.
Season the entire mixture with sea salt, black pepper, smoked paprika, and garlic powder, stirring to combine all ingredients.
Add the fresh baby spinach and toss for 1 minute until the leaves are just wilted.
Use your spoon to create two small wells in the hash and crack one egg into each well.
Reduce heat to medium, cover the skillet with a lid, and cook for 2-4 minutes until the egg whites are opaque and the yolks are cooked to your preference.
Remove from heat and serve hot directly from the skillet.
