2 whole jumbo pasta shells
3.5 oz ground turkey
0 tsp extra virgin olive oil
1 clove garlic
1 cup fresh spinach
0.13 cup part-skim ricotta cheese
1 tbsp grated parmesan cheese
0.25 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
0.25 cup marinara sauce
1 tbsp shredded mozzarella cheese
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells in a large pot of boiling salted water according to the package directions until al dente, then drain and set aside.
In a medium skillet, heat the olive oil over medium heat and sauté the ground turkey and minced garlic until the turkey is fully browned and cooked through.
Add the fresh spinach to the skillet and cook for 1-2 minutes until just wilted, then remove the pan from the heat.
In a medium mixing bowl, combine the cooked turkey and spinach with the ricotta cheese, parmesan, dried oregano, sea salt, and black pepper.
Spread 0.25 cup of the marinara sauce across the bottom of a small baking dish.
