INGREDIENTS
4 oz tuna steak
3 oz tempeh
1 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
1 tsp dried oregano
0.25 tsp sea salt

1 cup fresh arugula
1 clove garlic
PREPARATION
Pat the tuna steak dry with paper towels and season both sides with half of the sea salt and black pepper.
Slice the tempeh into thin half-inch strips and toss in a small bowl with the dried oregano and the remaining salt and pepper.
Heat the extra virgin olive oil in a large non-stick skillet over medium-high heat until shimmering.
Place the tempeh strips in the skillet and sear for 3 to 4 minutes per side until they are crisp and golden brown.
Push the tempeh to the outer edges of the pan and place the tuna steak in the center.
Sear the tuna for approximately 90 seconds to 2 minutes per side for a perfect medium-rare center.
Add the minced garlic to the pan during the final 30 seconds of cooking, stirring it around the tempeh until fragrant.
Remove the pan from the heat and immediately drizzle the fresh lemon juice over the tuna and tempeh.
Arrange the fresh arugula on a plate and top with the seared tuna steak and crispy tempeh strips.
