Seared Salmon Fillet with Roasted Asparagus and Cauliflower Mash
Pan-seared salmon served over a silky cauliflower mash with roasted asparagus and a squeeze of bright lemon.
INGREDIENTS
6.8 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Asparagus Spears
0.75 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on the baking sheet, misting with a tiny portion of the olive oil and a pinch of sea salt.
Roast the asparagus for 10 to 12 minutes until tender and slightly charred at the tips.
While the asparagus roasts, steam the cauliflower florets over boiling water until very soft, about 8 to 10 minutes.
Transfer the steamed cauliflower to a food processor or blender with the raw garlic and a pinch of salt, blending until it reaches a silky consistency.
Pat the salmon fillet dry and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon for 3 to 4 minutes per side until golden and cooked through.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the roasted asparagus with an optional fresh lemon wedge.
