Seared Sirloin Steak with Garlic Green Beans and Mashed Cauliflower
Pan-seared sirloin steak served with creamy mashed cauliflower and garlic-sautéed green beans, finished with a touch of savory grass-fed butter.
INGREDIENTS
6 oz Top Sirloin Steak (trimmed)
1.5 cups Cauliflower florets
1 cup Fresh Green Beans
2 tsp Grass-fed Ghee
2 cloves Garlic, minced
Sea salt and black pepper to taste
PREPARATION
Bring the sirloin steak to room temperature for 15 minutes and season both sides generously with sea salt and cracked black pepper.
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
While cauliflower steams, heat a heavy cast-iron skillet over medium-high heat with one teaspoon of ghee.
Sear the steak for 3-4 minutes per side for medium-rare, then remove from the pan and let it rest on a cutting board for at least 5 minutes.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are tender-crisp and slightly blistered.
Drain the steamed cauliflower thoroughly and mash with the remaining teaspoon of ghee and a pinch of salt until smooth and creamy.
Slice the rested steak against the grain and serve immediately alongside the mashed cauliflower and garlic green beans.
