Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over a bed of velvety cauliflower mash alongside tender steamed asparagus, finished with a bright squeeze of lemon.
INGREDIENTS
5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Olive Oil
2 tbsp Non-fat Greek Yogurt
1 tsp Ghee
1 clove Garlic
PREPARATION
Steam the cauliflower florets until they are very tender, approximately 10 to 12 minutes.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or blender; add the Greek yogurt, ghee, and garlic, then pulse until the mixture is smooth and creamy.
Pat the salmon fillet dry with a paper towel and season lightly with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4 to 5 minutes until the skin is crisp and golden.
Carefully flip the salmon and cook for an additional 2 to 3 minutes until the fish is cooked through to your preference.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve the steamed asparagus on the side.
