In the same skillet, sauté the diced onion and minced garlic until the onion is translucent and fragrant.
Stir in the crushed tomatoes and herbes de Provence, allowing the sauce to simmer gently for 5 minutes.
Fold the roasted vegetables and cooked chicken back into the skillet, stirring to coat everything in the sauce.
Simmer for an additional 5 minutes to allow the flavors to meld together beautifully.
Garnish with freshly chopped parsley and serve warm.
