Sautéed shrimp and brown rice noodles tossed in a tangy tamarind-lime sauce, finished with crunchy peanuts and fresh bean sprouts for a vibrant texture.
INGREDIENTS
8 oz Shrimp
1.5 oz Brown rice noodles
1 tsp Avocado oil
2 cloves Garlic
1 cup Bean sprouts
2 stalks Green onions
1 tbsp Tamari
1 tbsp Fish sauce
1 tbsp Lime juice
1 tsp Maple syrup
0.5 tbsp Peanuts
0.25 tsp Red pepper flakes
2 tbsp Cilantro
PREPARATION
Place the dry brown rice noodles in a large bowl and cover with very hot water; soak for 10-15 minutes until tender but firm, then drain.
In a small jar, whisk together the tamari, fish sauce, lime juice, maple syrup, and red pepper flakes to create the sauce.
Heat the avocado oil in a large skillet or wok over medium-high heat.
Add the minced garlic and sauté for 30 seconds until fragrant, then add the shrimp and cook until they just turn pink.
Add the drained noodles and the prepared sauce to the skillet, tossing constantly for 2 minutes until the noodles are well-coated and the sauce thickens.
Fold in the bean sprouts and sliced green onions, cooking for just 1 minute more to maintain their crunch.
Remove from heat and serve immediately, garnished with crushed peanuts and fresh cilantro.
