Roast the radishes for 20-25 minutes until they are tender and the edges are golden brown and slightly crispy.
While the radishes roast, heat the remaining olive oil in a large skillet over medium-high heat.
Add the diced yellow onion and minced garlic to the skillet, sautéing for 3-4 minutes until the onion is translucent and fragrant.
Add the ground beef to the skillet, breaking it apart with a wooden spoon, and cook until browned and fully cooked through.
Stir in the smoked paprika, fresh thyme, and chopped kale, cooking for another 2-3 minutes until the kale is vibrant green and slightly wilted.
Remove the roasted radishes from the oven and fold them into the beef mixture in the skillet.
Adjust seasoning if desired and serve immediately while hot.
