Peel and dice the sweet potato into small 1/2-inch cubes. Heat 0.5 tablespoon of olive oil in a large skillet over medium-high heat and cook the potatoes until tender and slightly browned, about 8-10 minutes.
While the potatoes cook, combine the ground turkey in a small bowl with the dried sage, fennel seeds, garlic powder, smoked paprika, sea salt, and black pepper. Mix well to incorporate the 'sausage' seasonings.
Remove the potatoes from the skillet and set aside. In the same skillet, add the seasoned ground turkey. Cook, breaking it up with a spatula, until browned and cooked through.
Add the diced red bell pepper to the skillet with the turkey and sauté for 3 minutes until softened. Stir in the baby spinach until just wilted, then transfer the turkey and veggie mixture to a serving bowl.
Wipe the skillet clean and add the remaining 0.5 tablespoon of olive oil over medium-low heat. Whisk the eggs and scramble them gently until soft and fluffy.
Top the turkey and vegetable mixture with the roasted sweet potatoes and scrambled eggs. Serve immediately.
