Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served over creamy mashed sweet potato with a side of garlicky green beans and a squeeze of fresh lemon.
INGREDIENTS
5.3 oz Salmon Fillet
4.2 oz Sweet Potato
5.3 oz Green Beans
1.5 tsp Olive Oil
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until fork-tender.
Drain the potatoes and mash them until smooth, seasoning with a pinch of salt and pepper.
Pat the salmon dry and season both sides with salt and pepper.
Heat half of the olive oil in a large skillet over medium-high heat and sear the salmon for 4 minutes per side until the skin is crisp.
Remove the salmon and add the remaining oil to the skillet, then sauté the green beans and minced garlic for 5 minutes until tender.
Serve the salmon over the sweet potato mash with the green beans on the side.
