PREPARATION
Season the beef chuck roast with sea salt and black pepper on all sides.
Heat avocado oil in a large skillet over medium-high heat and sear the roast until browned.
Place the sliced carrots, parsnips, and chopped onion in the bottom of a slow cooker.
Place the seared roast on top of the vegetables.
