Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over buttery mashed cauliflower with a side of garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tbsp Ghee
2 tbsp Non-fat Plain Greek Yogurt
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets until they are fork-tender and easily pierced.
Heat half of the ghee in a large cast-iron skillet over medium-high heat.
Season the salmon fillet with sea salt and black pepper then sear it skin-side up for 4 minutes until a golden crust forms.
Flip the salmon and continue cooking for another 3 to 4 minutes until it reaches your desired level of doneness.
In a separate sauté pan, melt the remaining ghee and add the green beans and minced garlic.
Sauté the green beans for 5 minutes with a tablespoon of water until they are bright green and crisp-tender.
Drain the steamed cauliflower and blend or mash it with the Greek yogurt and a pinch of salt until smooth and creamy.
Serve the seared salmon over a bed of cauliflower mash with the garlicky green beans on the side and a fresh squeeze of lemon.
