Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a bed of creamy cauliflower mash with garlic-sautéed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
5.4 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Olive Oil
2 cloves Garlic
2 tbsp Non-fat Greek Yogurt
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets until they are very tender, which usually takes about 10 to 12 minutes.
While the cauliflower is steaming, season the salmon fillet on both sides with a pinch of salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until the skin is crispy, then flip and cook for another 2 to 3 minutes until done.
Remove the salmon from the pan and set it aside to rest.
Add the remaining olive oil to the same skillet and sauté the green beans and minced garlic for 5 minutes until tender-crisp.
Drain the steamed cauliflower thoroughly and blend it with the Greek yogurt and a splash of lemon juice until it reaches a smooth consistency.
Serve the seared salmon over the creamy cauliflower mash with the garlic green beans on the side.
