Seared Salmon with Garlic Green Beans and Wild Rice
Pan-seared wild salmon served with garlicky green beans and lemon over a bed of nutty wild rice.
INGREDIENTS
6.5 ounces Wild Salmon Fillet
0.5 cup Cooked Wild Rice
1 cup Fresh Green Beans
2 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tablespoon Fresh Lemon Juice
PREPARATION
Prepare the wild rice according to package directions until tender and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Carefully flip the fillet and cook for another 3 minutes or until the salmon is cooked through to your preference.
Remove the salmon from the skillet and let it rest on a plate.
Add the remaining teaspoon of olive oil to the same skillet and toss in the green beans.
Sauté the green beans for about 5 minutes until they are tender-crisp and vibrant.
Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
Serve the seared salmon over the wild rice with the garlic green beans on the side and a fresh squeeze of lemon juice over the fish.
