Lemon Herb Chicken and Roasted Vegetable Couscous
Pan-seared chicken breast and roasted seasonal vegetables tossed with fluffy lemon-infused couscous for a bright and zesty finish.
INGREDIENTS
5 oz Chicken breast
0.25 cup Dry whole wheat couscous
0.5 cup Zucchini
0.5 cup Red bell pepper
1 tsp Extra virgin olive oil
1 tbsp Fresh lemon juice
1 tsp Lemon zest
1 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
0.5 cup Water
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Chop the zucchini and red bell pepper into bite-sized pieces and toss them on the baking sheet with half of the olive oil and a pinch of salt.
Roast the vegetables for 15 to 18 minutes until they are tender and slightly caramelized at the edges.
While the vegetables roast, season the chicken breast with garlic powder, sea salt, and black pepper on both sides.
Heat the remaining olive oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
Bring the water to a boil in a small saucepan, stir in the couscous, cover with a lid, and immediately remove from the heat to sit for 5 minutes.
Fluff the couscous with a fork and fold in the fresh lemon juice, lemon zest, and finely chopped parsley.
Slice the chicken into thin strips and serve it atop the lemon herb couscous alongside the roasted vegetables.
