PREPARATION
Preheat the oven to 400°F and roast the sliced green peppers on a baking sheet with a small drizzle of oil until they are tender and charred.
Heat a large skillet over medium-high heat and add the remaining extra virgin olive oil.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 30 seconds until the aroma is fragrant.
Pat the shrimp dry and add them to the skillet, cooking for 2-3 minutes per side until they turn pink and opaque.
Toss the roasted green peppers into the skillet with the shrimp, then stir in the lemon juice and sea salt to combine.
Spoon the garlic shrimp and peppers over the warm cooked white rice and garnish with chopped fresh parsley before serving.
