Ground Beef and Sweet Potato Hash
Sautéed lean ground beef and tender sweet potato cubes tossed with vibrant bell peppers and aromatic spices for a savory and satisfying hash.
INGREDIENTS
8 oz Ground beef (93% lean)
1 cup Sweet potato
0 tbsp Extra virgin olive oil
0.5 cup Red bell pepper
0.25 cup Yellow onion
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Smoked paprika
1 tbsp Fresh parsley
PREPARATION
Peel the sweet potato and cut it into small 1/2-inch cubes to ensure even cooking.
Heat the olive oil in a large cast-iron skillet or non-stick pan over medium-high heat.
Add the cubed sweet potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are tender and slightly browned.
Push the potatoes to the side of the pan and add the ground beef, diced onion, and diced red bell pepper.
Cook the beef, breaking it up with a spatula, until it is fully browned and the vegetables have softened.
Stir the sweet potatoes back into the meat mixture and season with sea salt, black pepper, garlic powder, and smoked paprika.
Continue to cook for another 2-3 minutes to allow the flavors to meld and the potatoes to get slightly crispy.
Remove from heat and garnish with freshly chopped parsley before serving.
