Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash and dice the yellow potatoes into 1/2-inch cubes and finely chop the nitrate-free bacon.
Place the potatoes and bacon on the prepared baking sheet, drizzle with olive oil and a pinch of sea salt and black pepper, then toss to coat evenly.
Roast the potatoes and bacon in the oven for 15 minutes.
While the potatoes roast, combine the ground chicken, egg, minced garlic, dried oregano, onion powder, and the remaining salt and pepper in a medium bowl.
Gently mix the chicken mixture until just combined and form into 1-inch meatballs.
Remove the baking sheet from the oven, move the potatoes to one side, and place the chicken meatballs on the other side.
Return the sheet to the oven and roast for an additional 15 to 18 minutes, or until the meatballs are cooked through and the potatoes are golden brown.
Place the fresh baby spinach in a serving bowl and top with the hot meatballs, potatoes, and crispy bacon to slightly wilt the greens before serving.
