5 oz Chicken breast
0.25 cup Plain Greek yogurt
0.5 cup Cooked basmati rice
0.5 cup Tomato puree
1 tsp Ghee
0.25 cup Yellow onion
1 tsp Fresh ginger
1 clove Garlic
1 tsp Garam masala
0.5 tsp Ground turmeric
0.5 tsp Ground cumin
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh cilantro
PREPARATION
Cut the chicken breast into bite-sized pieces and toss with half of the Greek yogurt and a portion of the sea salt and black pepper.
Heat the ghee in a large skillet over medium-high heat and sear the chicken until golden brown on all sides, then remove and set aside.
In the same skillet, sauté the diced onion, minced ginger, and garlic until the onion is translucent and fragrant.
Stir in the garam masala, turmeric, cumin, and the rest of the salt and pepper, toasting the spices for 30 seconds before adding the tomato puree.
Simmer the sauce for 5 minutes, then stir in the remaining Greek yogurt and return the chicken to the pan.
Cook for another 3-5 minutes until the chicken is cooked through and the sauce has thickened.
Serve the chicken tikka masala over the warm basmati rice and garnish with fresh chopped cilantro.
