PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Clean the cremini mushrooms and cut them into quarters to ensure even roasting.
In a small bowl, toss the mushrooms with the extra virgin olive oil and half of the sea salt and black pepper.
Spread the mushrooms on the baking sheet and roast for 15 to 20 minutes until they are browned and tender.
While the mushrooms roast, season the chicken breast with the remaining sea salt and black pepper.
Heat a stainless steel or cast iron skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
