Seared Salmon Fillet with Steamed Asparagus and Cauliflower Mash
Pan-seared wild salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
5.3 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and cook until very tender, about 10-12 minutes.
While cauliflower is steaming, add asparagus to the steamer during the last 4 minutes of cooking until bright green and tender-crisp.
Transfer the steamed cauliflower and garlic to a blender or food processor and pulse until smooth and creamy, seasoning with a pinch of sea salt.
Heat olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place in the hot skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness is reached.
Plate the cauliflower mash first, top with the seared salmon and steamed asparagus, and finish with a fresh squeeze of lemon juice.
