In a bowl, toss the zucchini spears with the almond flour, parmesan cheese, and half of the sea salt and black pepper until evenly coated.
Spread the zucchini fries in a single layer on the prepared baking sheet and roast for 18-20 minutes, flipping halfway through, until golden and crisp.
While the fries roast, combine the ground turkey, egg white, garlic powder, onion powder, and the remaining salt and pepper in a mixing bowl.
Form the turkey mixture into two equal-sized patties, pressing a small indentation in the center of each to ensure even cooking.
Heat the olive oil in a non-stick skillet over medium-high heat.
Sear the turkey patties for 5-6 minutes per side, or until the internal temperature reaches 165°F.
Place each cooked patty inside a butter lettuce leaf and serve immediately alongside the hot zucchini fries.
