Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon fillet paired with garlic-sautéed green beans and fluffy brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon fillet
1/2 cup cooked Brown Rice
1 cup fresh Green Beans, trimmed
1 tsp Avocado Oil
2 cloves Garlic, minced
1 tbsp fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the avocado oil.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, steam the green beans for 3 minutes until tender-crisp.
In a separate small pan, heat the remaining avocado oil over medium heat and sauté the minced garlic for 1 minute until fragrant.
Toss the steamed green beans into the garlic oil and sauté for 2 minutes, then finish with lemon juice.
Serve the seared salmon alongside the garlic green beans and warm brown rice.
