Begin adding the chicken broth 0.25 cup at a time, stirring frequently and waiting for the liquid to be fully absorbed before adding the next portion.
Once the rice is creamy and al dente, stir the cooked chicken back into the pan to warm through.
Turn off the heat and fold in the Greek yogurt, Parmesan cheese, sea salt, black pepper, and fresh thyme until the mixture is well combined and glossy.
