Seared Salmon Fillet with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy whipped cauliflower mash and garlic-sautéed green beans, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Pinch of Sea Salt and Black Pepper
1 tsp Fresh Lemon Juice
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a blender or food processor with a pinch of salt and a splash of lemon juice, then blend until completely smooth and creamy.
Trim the ends of the green beans and mince the garlic cloves.
Heat half of the olive oil in a skillet over medium heat, add the green beans and garlic, and sauté for 5-7 minutes until the beans are crisp-tender and bright green.
Season the salmon fillet with sea salt and black pepper.
In a separate non-stick skillet, heat the remaining olive oil over medium-high heat.
Place the salmon skin-side down in the hot pan and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 3 minutes until the fish is flaky and cooked through.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve the garlic green beans on the side.
