Spinach & Ricotta Stuffed Shells
Jumbo pasta shells stuffed with a creamy spinach and herb-flecked cheese blend, baked in a savory turkey marinara sauce until bubbling and golden.
INGREDIENTS
1 whole jumbo pasta shells
0.25 cup low-fat cottage cheese
0.13 cup part-skim ricotta cheese
1 large egg
1 cup fresh spinach
1 oz 93% lean ground turkey
0.5 cup marinara sauce
0.5 oz part-skim mozzarella cheese
1 tbsp parmesan cheese
0.25 tsp garlic powder
0.25 tsp dried oregano
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Preheat your oven to 375°F and lightly grease a small oven-safe baking dish.
Boil the jumbo pasta shells in a pot of salted water until al dente, then drain and set aside to cool slightly.
In a small non-stick skillet, brown the ground turkey over medium heat until fully cooked, then stir in the marinara sauce and simmer for 2 minutes.
Finely chop the fresh spinach and place it in a medium mixing bowl.
Add the cottage cheese, ricotta, egg, garlic powder, oregano, sea salt, and black pepper to the spinach, stirring until well combined.
Spread half of the turkey marinara sauce across the bottom of the prepared baking dish.
Generously fill each cooked pasta shell with the spinach and cheese mixture and arrange them on top of the sauce in the dish.
Spoon the remaining sauce over the shells and sprinkle evenly with the mozzarella and parmesan cheese.
Bake for 20 to 25 minutes until the cheese is melted and the sauce is bubbling around the edges.
