Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with garlic-infused cauliflower mash and tender green beans, finished with a squeeze of lemon and a buttery glaze.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Avocado Oil
2 tbsp Non-fat Greek Yogurt
1 tsp Ghee
1 clove Garlic
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the green beans and steam them for 5-6 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat avocado oil in a skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until desired doneness is reached.
Drain the steamed cauliflower and transfer to a blender or food processor.
Add the Greek yogurt, ghee, and minced garlic to the cauliflower and pulse until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and the seared salmon fillet.
