Seared Salmon with Asparagus and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with tender roasted asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1.5 teaspoons Extra Virgin Olive Oil
1 tablespoon Nutritional Yeast
1 clove Garlic
PREPARATION
Steam the cauliflower florets and garlic clove until very tender, about 10-12 minutes.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the nutritional yeast and half of the olive oil, and blend until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and add the asparagus spears to the pan, cooking for another 3-4 minutes until the salmon is cooked through and asparagus is tender-crisp.
Plate the cauliflower mash first, top with the seared salmon, and serve the asparagus on the side.
