Pan-Seared Sirloin with Garlic Herb Butter
Pan-seared sirloin basted in a fragrant garlic-herb ghee, served with crisp-tender asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz Sirloin steak
1 tbsp Ghee
2 clove Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
1 cup Asparagus
1 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Remove the sirloin from the refrigerator 20 minutes before cooking and pat dry with paper towels.
Season both sides of the steak evenly with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the olive oil.
Place the steak in the hot skillet and sear for 3-4 minutes until a deep golden crust forms.
Flip the steak and immediately add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melting herb ghee for another 3-4 minutes.
Remove the steak from the pan and let it rest on a cutting board for 5 minutes to lock in the juices.
While the steak rests, toss the asparagus into the same skillet and sauté for 3-5 minutes until crisp-tender.
Slice the steak against the grain and serve immediately alongside the buttery asparagus.
