120g Sweet Potato
1 cup Green Beans
0.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and dice the sweet potato, then steam or boil until fork-tender, approximately 12-15 minutes.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are bright green and the garlic is toasted.
