Seared Salmon with Steamed Asparagus and Garlic Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of lemon and a buttery, golden crust.
INGREDIENTS
6 oz Wild Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
1 tbsp Ghee
2 tbsp Non-fat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets and the minced garlic clove until very tender, about 10-12 minutes.
While cauliflower is steaming, trim the woody ends off the asparagus and steam them for 4-5 minutes until bright green and tender-crisp.
Transfer the steamed cauliflower and garlic to a food processor or bowl; add the Greek yogurt and half of the ghee, then blend or mash until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Plate the garlic cauliflower mash, top with the seared salmon, and serve the steamed asparagus on the side with a fresh lemon wedge.
