Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes with crisp garlic-sautéed green beans.
INGREDIENTS
7.5 oz Wild Atlantic Salmon Fillet
120g Sweet Potato
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until fork-tender, approximately 12 minutes.
Drain the sweet potato and mash thoroughly until creamy, adding a pinch of sea salt if desired.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is golden and crispy, then flip and cook for an additional 3 minutes.
In a separate small pan, sauté the green beans and minced garlic with a tablespoon of water until the beans are vibrant and tender-crisp.
Serve the seared salmon atop the sweet potato mash with the garlic green beans on the side.
