PREPARATION
Steam the cauliflower florets and green beans in a steamer basket over boiling water until the cauliflower is very soft and the beans are tender-crisp.
Remove the green beans and set them aside, keeping them warm.
Transfer the steamed cauliflower to a blender or food processor, adding the minced garlic and half of the ghee, then process until completely smooth and creamy.
Season the salmon fillet generously with sea salt and black pepper.
Heat the remaining ghee in a cast-iron skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the skillet and sear for 4 to 5 minutes until the skin is crispy and golden.
