Spinach & Ricotta Stuffed Shells
Jumbo pasta shells stuffed with a creamy spinach and ricotta mixture, baked in a savory turkey marinara sauce until bubbly and golden.
INGREDIENTS
4 whole jumbo pasta shells
5 oz ground turkey (99% lean)
0.25 cup part-skim ricotta cheese
2 tbsp egg whites
1 cup fresh spinach
0.5 cup marinara sauce
1 tbsp parmesan cheese
0.25 tsp garlic powder
0.25 tsp dried oregano
0.13 tsp sea salt
0.13 tsp black pepper
PREPARATION
Preheat your oven to 375°F and lightly grease a small baking dish.
Boil the jumbo pasta shells in a pot of salted water according to package directions until al dente, then drain and set aside.
In a non-stick skillet over medium heat, cook the ground turkey until fully browned and crumbled.
Stir the marinara sauce into the skillet with the turkey and simmer for 2 minutes to meld the flavors.
Finely chop the fresh spinach and place it in a medium bowl.
Add the ricotta cheese, egg whites, garlic powder, oregano, salt, and pepper to the bowl with the spinach and mix until well combined.
Spread half of the turkey-marinara sauce across the bottom of the prepared baking dish.
Fill each cooked pasta shell generously with the spinach and ricotta mixture and arrange them in the dish.
Spoon the remaining turkey sauce over the shells and sprinkle with parmesan cheese.
Bake for 20 minutes until the sauce is bubbly and the cheese is melted.
