Flaked Salmon and Dill Salad
Pan-seared salmon flaked into a creamy dill and Greek yogurt dressing, served over crisp mixed greens for a refreshing and zesty lunch.
INGREDIENTS
7 oz Salmon fillet
0.25 cup Plain Greek yogurt
1 tbsp Fresh dill
1 tbsp Lemon juice
0.25 cup Cucumber
1 tbsp Red onion
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
1 cup Mixed greens
PREPARATION
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with half of the sea salt and black pepper.
Place the salmon in the skillet and sear for 4 to 5 minutes per side until it is cooked through and easily flakes with a fork.
Remove the salmon from the heat and let it cool for a few minutes.
In a medium mixing bowl, whisk together the Greek yogurt, lemon juice, chopped fresh dill, and the remaining salt and pepper.
Finely dice the cucumber and mince the red onion, then add them to the yogurt dressing.
Use a fork to flake the salmon into bite-sized pieces and gently fold it into the dressing until well coated.
Arrange the mixed greens on a plate and scoop the flaked salmon salad over the top to serve.
