PREPARATION
Preheat the oven to 400°F (200°C).
On a baking sheet, toss the sliced zucchini and cherry tomatoes with the olive oil, sea salt, and black pepper.
Roast the vegetables for 15-20 minutes until the tomatoes have burst and the zucchini is tender.
While the vegetables roast, season the chicken thighs with a pinch of salt and pepper and sear in a hot skillet over medium-high heat for 5-7 minutes per side until cooked through.
Remove the chicken from the heat and immediately brush the tops with the basil pesto.
In the same skillet, add the fresh spinach and toss for 1 minute until just wilted.
