Pan-Seared Chicken with Roasted Vegetables
Golden pan-seared chicken breast served alongside a vibrant medley of oven-roasted broccoli, bell peppers, and carrots for a crisp and satisfying finish.
INGREDIENTS
5.5 oz Chicken breast
1 tbsp Olive oil
1 cup Broccoli florets
0.5 cup Sliced carrots
0.5 cup Red bell pepper
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Dried oregano
PREPARATION
Preheat your oven to 400°F (200°C).
On a large baking sheet, toss the broccoli florets, sliced carrots, and red bell pepper with half of the olive oil, half of the sea salt, and half of the black pepper.
Spread the vegetables in a single layer and roast for 15-20 minutes until tender and slightly caramelized at the edges.
While the vegetables roast, season the chicken breast evenly on both sides with the garlic powder, dried oregano, and the remaining sea salt and black pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Place the chicken in the skillet and sear for 5-7 minutes per side, or until the exterior is golden brown and the internal temperature reaches 165°F.
Remove the chicken from the pan and let it rest for 3 minutes before slicing.
Serve the sliced chicken alongside the roasted vegetable medley.
