Dice the chicken breast into bite-sized 1-inch cubes and finely chop the yellow onion and garlic.
Heat the ghee in a medium skillet over medium heat. Once shimmering, add the cumin seeds and toast for 30 seconds until they become fragrant.
Add the diced onion to the skillet and sauté for 3-4 minutes until translucent and soft.
Stir in the garlic, ginger paste, and cubed chicken. Cook for 5 minutes, stirring occasionally, until the chicken is browned on all sides.
Add the garam masala, turmeric, sea salt, and black pepper, tossing the chicken to coat it evenly in the spices.
Pour in the tomato puree, rinsed chickpeas, and water. Stir well to combine all ingredients.
Reduce the heat to low, cover the skillet, and simmer for 10-12 minutes until the sauce has thickened and the chicken is cooked through.
Remove from heat and garnish with fresh chopped cilantro before serving.
