Herb-Crusted Salmon with Roasted Asparagus
Oven-roasted salmon fillet coated in a zesty Dijon-herb crust, served alongside crisp-tender asparagus for a vibrant and nutrient-dense meal.
INGREDIENTS
7 oz salmon fillet
1.5 cup asparagus
0.5 tbsp olive oil
1 tbsp dijon mustard
0.5 tsp dried parsley
0.5 tsp dried dill
0.25 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss them on one side of the baking sheet with the olive oil, a pinch of sea salt, and black pepper.
In a small bowl, whisk together the Dijon mustard, dried parsley, dried dill, garlic powder, and lemon juice until well combined.
Place the salmon fillet on the other side of the baking sheet and spread the mustard-herb mixture evenly over the top.
Sprinkle the remaining sea salt and black pepper over the salmon and asparagus.
Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
Serve immediately with an extra squeeze of fresh lemon if desired.
