7 oz Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Asparagus spears
1 tsp Ghee
1 clove Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and steam them in a separate basket for 4-5 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half the ghee in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from heat.
Transfer the steamed cauliflower to a blender or food processor with the remaining ghee, minced garlic, and a splash of water if needed. Blend until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the steamed asparagus with a fresh squeeze of lemon juice.
